Under normal circumstances, orders placed before 1 pm (Monday-Thursday) will be processed and despatched on the same day. However, this is not guaranteed and under certain circumstances, order processing and despatch may take up to 24 hours.
We cannot accept liability for losses or damages incurred due to delayed despatch of orders. In all circumstances, you will receive an email advising you shortly after your order has been dispatched.

As the anchovies are semi-conserved, there is a limited expiration time that needs to be determined, which can range from 6 months to 1 year. This period will be imposed by the manufacturer, and it depends on the way the anchovies were elaborated. An expiration period can be different from one manufacturer to another.
We fish our anchovies from the coastal waters of the Cantabrian Sea, the southern part of the Bay of Biscay in the Atlantic ocean.
Anchovies are rich in omega-3 fatty acids, essential for a balanced diet.
Anchovies are a source of proteins with a high biological value, similar to that of eggs or meat.
Anchovies contain vitamins A, D, E and K.
Anchovies also contain vitamins B2, B3, B6, B9 and B12.
A preserved product has been packaged in a hermetically closed container and subjected to a heat treatment (sterilization) sufficient to destroy or inactivate any microorganism. In this way, the product can be stored at room temperature for a long time. The shelf life of these products in perfect condition is several years. An example is canned fish.
A semi-preserved product is kept in a waterproof container that has undergone a treatment that stabilizes it for a limited time. An example is salted anchovies or anchovy fillets in olive oil, matured by the effect of salt. They are introduced into barrels separated by layers of salt to ensure that it penetrates well, a weight is placed on the barrels.
This causes water to escape from the meat and a series of transformations take place during six months until they are mature, which modify its aroma, texture and flavor. As they are not sterilized products, they must be kept refrigerated.
Tins and jars of anchovy fillet and salted anchovy should be kept in the refrigerator. However, they should be consumed at room temperature. It is recommended to remove them 2 hours before consumption, since the oil will be semi-solid due to the cold.
Once opened, the can or jar of anchovy fillets can be kept refrigerated for a few days as long as they are covered with oil, this way they can preserve all their flavor.
In the case of salted anchovies, they must be kept in their container covered by the brine they came in.
In the case of canned fish (e.g. Albacore tuna) the sterilization processes guarantee the death of the parasite.
In semi-preserved foods, the elimination of the parasite is achieved through the salting process (salting and anchovy fillet).
In this way we guarantee that our products are completely free of Anisakis and therefore safe for the consumer.
